Premium Creams
- In what section of the supermarket will I find the Premium Creams range?
- Tatua Sour Cream, Tatua Farms Mascarpone and Tatua Farms Crème Fraiche can be found in the dairy chiller (near the cheeses and yoghurts) at your supermarket.
- Will the Premium Creams separate if I apply heat to them?
- No. Tatua's Sour Cream, Mascarpone and Creme Fraiche products are perfect for heating and for culinary applications, as they do not separate.
- Can I freeze any of the Premium Creams?
- Tatua Farms Mascarpone and Crème Fraiche can be frozen both on their own, and when added to other ingredients.
- How is Tatua Sour Cream different from other sour cream?
- Tatua Sour Cream has a long shelf life - unopened for 6 months, it contains no preservatives and has excellent heat stability - it will not separate on heating. It has a thick, velvety texture with a distinctive tangy flavour. It is perfect to add to cakes, baking, desserts and sauces.
Sauces
- In what section of the supermarket will I find the Tatua Farms Sauces range?
- Tatua Farms sauces are found in the refrigerated section of the supermarket near the cheeses or other sauces.
- Can I freeze any of the products in the sauce range?
- Yes, the cheese sauce can be frozen. If you only require small portions per serving, try freezing the sauces in ice trays.
- Can I heat Tatua Farms Sauces?
- The sauces can either be served at room temperature or gently heated in a microwave or on the stovetop in accordance with the instructions on the side of the pack.
- Can the products be heated inside the packs?
- The packs are not designed to be heated and therefore it is not recommended that the products be heated inside the packs. Instead empty the contents of the packet in a suitable dish or pan before heating.
- Can I store unopened pouches at room temperature?
- All Tatua Farms Sauces can be stored under ambient conditions. However, please make sure it is refrigerated once it is opened and consume within seven days.
- What flavour is used in the Tatua Farms Cheese Sauce?
- Our cheese sauce is made from real aged New Zealand cheddar with no additional flavours.
- If I am substituting Tatua Farms Cheese Sauce for grated cheese – how much do I use?
- Tatua Farms Cheese Sauce is highly versatile and can be used in a wide range of applications where grated cheese is used. We recommend starting with a 1 to 1 replacement and adjusting if necessary.
- For what period of time is the cheese sauce safe in a cooked and refrigerated pie?
- Once opened, UHT products on their own have an open shelf life of approximately seven days at refrigerated temperatures. It is recommended that the product be consumed before the end of this time.
However, as germs may have been introduced by the other ingredients in the pie to the cheese sauce, it is important to ensure good hygiene in the first instance and if the pie is not to be consumed within 2 hours, the pie should be kept at 4 °C or lower, or held above 65 °C for a maximum of 4 hours. - Can the cheese sauce be held in bain-maries?
- Yes the sauce can be held in bain-maries, although for reasons of microbial safety, they should be held at a minimum of 65°C and covered to minimise evaporation.
Whipped Creams
- Is whipped cream in a can made from real cream?
- Dairy Whip® Whipped Cream is made from fresh cream sourced from Tatua's own supplier farms in the Waikato region.
- How long can I keep Dairy Whip® Whipped Cream in my refrigerator after it is used for the first time?
- So long as your whipped cream is kept refrigerated and the nozzle is cleaned after each use, you can use the whipped cream until the best before date on the base of the can.
- Is Dairy Whip® Whipped Cream lower in fat than regular cream?
- Yes. Regular cream has at least 35g of fat per 100g of cream in Australia and New Zealand while Dairy Whip® Whipped Cream has only 27.6g of fat per 100g. For those who are watching their fat intake, Dairy Whip® Lite has only 18g of fat per 100g serve.
- How many cups of whipped cream can I expect from Dairy Whip®?
- From a 250g can of Dairy Whip® Whipped Cream, one can expect to obtain between 4 to 5 cups of whipped cream.
- How is Dairy Whip® Whipped Cream different to whipping cream?
- Dairy Whip® Whipped Cream is made from fresh cream, just as whipping cream is, but different ingredients have been added to the cream in this unique packaging format to enhance its functionality and make it more convenient to use.
- Why does whipped cream 'disappear' after a period of time?
- It contains a much higher content of air than normal whipping cream (as much as 2 ½ times more) which makes the foam more unstable and hence it tends to break down and 'disappear' after a short period of time. To avoid disappointment serve immediately.
- Why can't I get all of the cream out of the can?
- To minimise the problem of product being retained in the can, follow the usage instructions on the side of the can and always keep the product refrigerated.
Do not attempt to heat the can, as this is potentially dangerous. Heating will increase the pressure within the can and this could result in an explosion.
