Lactoferrin
Lactoferrin is an iron-binding
protein found naturally in numerous bodily secretions,
including milk, tears, mucus, blood and saliva. It has
an extensive range of biological properties and potential
applications.
Properties
- very high affinity for iron
- bacteriostatic or bacterial agent
- antifungal (against Candida)
- antiparasitic
- immunomodulatory properties
- natural antioxidant
Lactoperoxidase
Lactoperoxidase is
the most prominent enzyme found in milk. In combination
with its cofactors (peroxide and thiocyanate), it forms
the lactoperoxidase system, which has potent antibacterial
activity. Lactoperoxidase is commercially available
as a freeze-dried powder of defined activity.
Properties
- antibacterial (in combination
with cofactors) against a wide range of pathogens, including
Listeria and E.coli.
Glycomacropeptide
GMP is a large, glycosylated,
heat-stable peptide cleaved from kappa-casein by the action
of chymosin. Many of its biological properties are
associated with the presence of sialic acid residues.
Properties
- high level of glycosylation
- antibacterial
- antiviral adhesion
- anti-toxin
- modulator of digestive hormones
- low level of aromatic amino acids
- high levels of branched chain
amino acids
Caseinate
Tatua produces an extensive range of
caseinates, including calcium, sodium, magnesium, potassium
and mixed caseinates.
Protein hydrolysates (whey, casein
and vegetable)
By carefully controlling
the enzymatic hydrolysis of proteins, Tatua produces a
wide variety of protein hydrolysates and bioactive peptides
for specialised nutritional purposes.
Properties
Compared to intact proteins, hydrolysates
have:
- improved solubility
- enhanced heat and acid stability
- reduced viscosity, especially compared
with casein
Studies have shown that nitrogen from
small peptides (primarily di- and tri-peptides) is better
absorbed than nitrogen from amino acids or whole proteins.
Whey protein concentrate
Tatua specialises in
producing whey protein concentrates with enhanced gelling
properties.
Anhydrous Milk Fat (AMF)
Tatua Anhydrous Milk
Fat (AMF) is manufactured by the removal of moisture and
non-fat solids from pure, fresh New Zealand cream. Tatua
AMF is an ideal ingredient used to enhance mouthfeel,
appearance, flavour and aroma in a wide range of food
products.
