Vanilla Cheesecake with Poached Cherries
Serve this cheesecake topped with Tatua™ Dairy Whip® Whipped Cream and cherries on the side.
Ingredients
1 cup sweet biscuit crumbs
60 g butter
500g cream cheese
½ cup castor sugar
2 tsp vanilla essence
3 tsp gelatine, dissolved in ¼ cup boiling water, cooled
2 Tbsp lemon juice
2 cups Tatua™Dairy Whip® Whipped Cream
300g frozen pitted cherries
¼ cup caster sugar
¼ cup water
Tatua™Dairy Whip® Whipped Cream, extra, to serve
Method
- Combine biscuit crumbs and butter and press into a 20cm paper lined springform pan.
- Gently beat the cream cheese and sugar until smooth. Stir in vanilla, gelatine mixture and lemon juice.
- Fold in Tatua™ Dairy Whip® Whipped Cream and pour onto prepared base and chill for 1-2 hours or until set.
- Combine cherries, sugar and water in a saucepan and simmer over low heat, cool.
- Serves 8
