Tasty Enchiladas

Ingredients

2 tablespoons olive oil

1 onion, finely diced

1 clove garlic, finely diced

500g prime beef mince

1 tin crushed whole peeled tomatoes

1 tablespoon corn flour

1 tablespoon Worcestershire sauce

¼ cup BBQ sauce

500g cream cheese, at room temperature

½ teaspoon smoked paprika

¼ cup grated parmesan cheese

2 handfuls baby spinach leaves

4 large wraps

1 large avocado, diced

1 spring onion, finely sliced

1 small bunch herbs, finely chopped

¼ cup sweet chilli sauce

Method

  1. Heat the oil in a non-stick frying pan.
  2. Sauté the onion, garlic and mince until browned.
  3. In a bowl combine the tomatoes, corn flour, Worcestershire sauce, BBQ sauce and mix well.
  4. Stir the tomato mixture into the mince and simmer for five minutes until thickened and saucy.
  5. Allow mince mixture to cool.
  6. Combine the cream cheese, paprika and parmesan cheese.
  7. Spread the wraps with half of the cream cheese mixture.
  8. Add a layer of spinach leaves.
  9. Top with mince.
  10. Roll up the wraps to enclose the filling and arrange in an oven proof serving dish.
  11. Spread with remaining cream cheese mixture and sprinkle with the grated cheese.
  12. Bake for 25-30 minutes at 180°C until golden and bubbling.
  13. Toss the diced avocado, spring onion, herbs and sweet chilli.
  14. Cut the wraps and serve with the avocado salsa.
